Onion Rings for 2
Ingredients...
1 Large Yellow Onion
Vegetable Oil
Butter Milk
Cornmeal
Flour
Salt & Pepper
Slice the onion rings about a half an inch thick and try not to shed a tear. Next, in a large bowl add about 1 to 2 cups of buttermilk and salt and pepper to taste and let the rings soak for an hour or two.
Once you are ready to fry, get a large stock pot and fill with about 2 to 3 inches of vegetable oil. Heat until it reaches about 200 degrees.
In a separate bowl add about a half a cup of flour and half a cup of cornmeal, more dashes of salt and pepper and mix. Coat about 5 onion rings at a time for frying. You don't want to crowd them. Flip with tongs until they are golden brown and have been kissed by the batter-fried gods.
Dip in lots of ketchup.
Recycle the oil for future fried cooking endeavors.
